Pecan Toffee Bars

taken from the ‘Tis the Season post

12-15 Graham Crackers

1 cup butter, melted

1 cup dark brown sugar

1 12 ounce package semi sweet or milk chocolate morsels

1 cup chopped pecans

1. Preheat oven to 400 degrees

2. Line a cookie sheet with foil. Cover foil with whole graham crackers.

3. Simmer butter and brown sugar 3 minutes and pour quickly over graham crackers.

4. Bake 5 minutes.

5. Remove from oven and sprinkle chocolate morsels and pecans over crackers.

6. Refrigerate. Break into pieces of “toffee” when hardened.

Yields 35-45 pieces

You can get very creative with the toppings. I like to use white chocolate and have used peanut butter morsels, coconut, almonds, and other toppings. I usually increase the pecan amount by an additional 1/2 cup.

You don’t have to use nuts at all. I would put a few more chocolate chips on it to fill in the gaps though. Other nuts like almonds or walnuts would work well. Coconut is another possible topping. One year our family made it with mint chocolate chips for a different twist.

All tasks dealing with heat should be handled by the parent. The children enjoy participating in the initial setup and the topping phase.
